O Pedro joins forces with Bomra’s to create a Burmese-inspired limited-edition menu, available from July 27 to August 14, 2019. By Pallavi Mehra
O Pedro, Mumbai’s Goan restaurant and bar plans to bring Goa’s much-loved eateries to Mumbai as a part of their ‘Off Season’ collaboration series. They are beginning this series with an association with chef Bawmra Jap from Bomra’s in Goa.
Nestled just off Fort Aguada road in Candolim, Goa, Bomra’s is a quaint Burmese eatery. The restaurant serves scrumptious food with influences from the cuisine of Burma, China, India, Laos and Thailand. With the arrival of the monsoons in Goa, restaurants and bars in the city are closed for the season, allowing chef Bawmra Jap to cook at O Pedro, Mumbai. Chef Bawmra is well-known in the Indian culinary industry for his refined take on traditional dishes. He serves Burmese cuisine with contemporary Southeast Asian influences using only the freshest local ingredients.
This monsoon, Bomra’s and O Pedro have joined forces to create a limited-edition Burmese-inspired menu. For the weekend of July 27 and 28, guests got a chance to experience an extensive Burmese special menu created by chef Bawmra and chef Hussain, Executive Chef at O Pedro. The signature dishes from this menu will continue to be available along with O Pedro’s regular menu from July 29 to August 14, 2019.
We got an exclusive preview of this special menu showcasing a modern twist on Burmese dishes influenced by the Goan cuisine. The menu comprises of flavourful dishes with chef Bawmra Jap’s trademark flair. The extensive weekend menu includes Bomra’s chilli chicken and Candolim midnight stew. Burmese staples like ‘La-Pay-Toe’ (fermented tea leaf salad), Shan tofu and Shiso tempura along with a range of new dishes are created out of the collaboration between the two chefs. The other innovations include Scampi ceviche with Burmese coriander, kaffir lime, mango ginger and yuzu ponzu, Tofu curry with roasted pumpkin, dried red chillies and lotus root chips, Bheja tempura, Spicy rice noodles with snow peas, broccoli, crushed peanuts and homemade shan tofu sauce, Chorizo and prawn fried rice with XO sauce, Chargrilled quail skewers, Coconut and edamame rice, Burmese palata and Lemongrass crème brûlée served with spiced biscotti and candied ginger.
The Scampi ceviche, Tofu curry, Spicy rice noodles, Smoked corn gnocchi and Dry-aged meat tartare made it to our favourites list. From July 29 to August 14, Smoked corn gnocchi with banana flower ragu and black sesame purée, Dry-aged meat tartare with mango ginger, Burmese coriander and citrus aioli, Good Ol’ khow suey, Chorizo and prawn fried rice, Steamed fish served in a banana leaf with Asian herbs and Burmese junglee sauce, Candolim midnight stew and Coconut panna cotta with roasted pineapple purée, coconut shortbread and candied pineapple will be available along with the regular O Pedro menu.
