Based solely on its stunning Art Deco interior, Atlas gets a big tick in the romantic bar category. But the bar is more than just flash. The current Simple Pleasures cocktail menu offers subtle yet thought-provoking tweaks to classic cocktails such as the Martini, and the stated ABV contents empower consumers to make informed choices. Alternatively, choose a gin from the bar’s 1,300-strong collection, have it in a G&T, and nibble on refined mod-European cuisine.

Barbary Coast is inspired by the madams that ran the famous ballrooms of San Francisco’s red light district, recreated here with deep alcoves shielded by velvet drapes, including two equipped with a “press for champagne” button. Minutes later, a bottle appears without having to break the conversation with your date. The other offerings are just as sultry, from the velvety Raspberries & Cream cocktail to the impressive cheeseboards.

Gibson remakes classic cocktails with Asia in mind, and they do it without reaching for well-worn cliches. Take sugarcane juice, which is fermented into a wine and accented by cachaca. The namesake cocktail features sake-based vermouth that seamlessly blends in waves of umami flavour. Visiting Gibson also gives you the chance to explore its sister concepts in the same building like the midcentury modern Japanese bar, Live Twice, and the sleek seafood bistro, Humpback.

The best spot for a tryst at Origin Bar is the recesses of one of the three dark nooks that can be curtained off for more privacy. Complementing the train travel-inspired interior are 20 cocktails that mark monumental events in history, from the creation of chewing gum – the drink even comes with one – to the invention of the atomic bomb, recreated here as a bubble that pops in a puff of smoke.

Dimly lit with seductively boozy drinks: Manhattan has all the right ingredients for a date-night spot. New York remains the central element here, and the city’s iconic Broadway theatre district offers inspiration for its latest cocktail menu.
